Cinco de Mayo Spread

Happy Cinco de Mayo everyone! Usually, people celebrate Cinco de Mayo by going to the nearest bar and downing all the tequila they can tolerate (or not tolerate). Instead of going to the bar to celebrate Cinco de Mayo, why don't you stay home and invite some of your friends over to cook and eat a delicious meal! Below I have a few recipes to get into the Cinco de Mayo mood.


Chips & Salsa


- 10 to 20 cherry tomatoes (chopped)

- 1/4 of an onion (chopped)

- 4 to 6 sprigs of cilantro (diced)

- 1 tablespoon of chili lime seasoning (Trader Joes)


1. Chop cherry tomatoes.

2. Chop onions.

3. Dice cilantro.

4. Mix all together and add chili lime seasoning.



- 1 can of black beans

- 1 tablespoon of chili lime seasoning

- cajun powder seasoning

- black pepper


1. Empty the can of black beans in a small saucer and place it on the stove. Turn the stove on medium heat.

2. Add seasonings and let cook for 10 minutes.

3. Once the beans come to boil, turn the heat down to a simmer.

4. Turn off the stove and serve.


Shrimp Bowl


- 20 to 25 pieces shrimp (cleaned, peeled, and deveined)

- chili lime seasoning

- cajun seasoning

- chili powder

- cayenne pepper

- black pepper

- 2 tablespoons of sugar

- 3 tablespoons of vegetable oil

- 1 heart of romaine lettuce (chopped)

- black beans (recipe above)

- pico de gallo (recipe above)

- jasmine rice (1 cup)

- lime juice

- cilantro (minced)

- 2 cups of water


1. Peel, devein, and clean shrimp.

2. Season shrimp with black pepper, cajun seasoning, chili powder, and cayenne pepper.

3. Let shrimp marinate in the refrigerator for at least 30 minutes.

4. In the meantime, prepare pico de gallo and black beans.

5. In a smaller pot, let 2 cups of water come to boil.

6. Add jasmine rice and a juice of a lime and cover and let simmer for 20 - 25 minutes.

7. Remove the shrimp from the refrigerator.

8. In a skillet add 3 tablespoons of oil and 2 tablespoons of sugar on high heat.

9. Once the oil turns brown, reduce the heat to medium-high and IMMEDIATELY ADD SHRIMP

10. Once all the shrimp have been added to the skillet, reduce the heat down to medium.

11. Turn over shrimp and let it cook for 2 minutes on the other side.

12. Remove shrimp from the skillet.

13. Check the rice to see if it's been cooked all the way through. If it's to your liking, turn off the burner and remove the lid.

14. Fluff the rice with a fork and add cilantro.


- Rice

- Shrimp

- Lettuce

Shrimp Bowl


Vegetarian Nachos


- yellow corn tortilla chips (1/4 of the bag)

- vegan meat (Trader Joe's Beef-less Ground Beef)

- 10 to 20 cherry tomatoes (chopped)

- 1/2 to 2 cups of shredded cheese Mexican blend

- 3 sprigs of cilantro

- juice of a lime

- lettuce (optional)

- 1 tablespoon of vegetable oil

- cajun powder

- chili powder

- black pepper


1. Place skillet on medium-high and add vegetable oil.

2. Add vegan meat to the skillet.

3. Add black pepper, cajun powder, and chili powder and mix together.

4. Turn the heat down to medium and let cook for 5 minutes.

6. Chop tomatoes.

7. Preheat oven to 350 degrees Fahrenheit.

8. Line your baking sheet with aluminum foil.

9. EVENLY LAYER YOUR NACHOS: (*NOTE: this is a bit of a tedious task but it works if you want to avoid SOGGY tortilla chips)

- Tortilla chip

- Vegan Meat

- Tomatoes

- Shredded cheese

-REPEAT 3X (*NOTE: depending on the size of your baking sheet, you could it up with 2, 3, or even 4 layers. A casserole dish will work also)

Layered Nachos

10. Place nachos in the oven and cook for 15 minutes or until the cheese is melted.

11. Chop cilantro.

12. Take nachos out of the oven and add cilantro and the juice of a lime on top of the nachos.
