You want something that's hearty and delicious and will keep you full and satisfied? Try this Quinoa Breakfast Bowl. This bowl is my go-to if I want something tasty, satisfying, and healthy!
- 1/2 cup of apple juice
- 1/4 cup of quinoa
- 1/2 teaspoon of chia seeds
- 2 tablespoons of vanilla extract
- 2 tablespoons (or more) of peanut butter
- small handful of almonds
- 1 tablespoon of cacao nibs
- handful blackberries (or more)
DISCLAIMER: This is a bit sweet due to the apple juice. If want to replace the apple juice with water you can. Customize how YOU like it!
Pour 1/2 cup of apple juice and 3 tablespoons of vanilla extract into a small saucepan and heat it on High. Pour 1/4 cup of quinoa and 1/2 teaspoon and pour it in the saucepan with the apple juice. Let it come to a boil then cover and let simmer for 20 - 30 minutes (depending on your stove).
Once the quinoa is done, turn off the stove and let sit for five minutes. Fluff with fork and pour the quinoa in a bowl.
First add the peanut butter, almonds, cacao nibs, and blackberries.
If you don't like blackberries, add a berry that you prefer. You can customize this recipe how you want and still enjoy a hearty vegan breakfast!
