"In the kitchen wrist twistin' like a stir fry!"
Okay, that was corny (but comment and let know what song that's from).
Anyways, stir fry is one of my favorite meals to cook almost every week. Not only is healthy but its flavorful and vegan!
You will need
- 1/2 cup rice (optional)
- 1 cup of water (for the rice)
- 1 bag of Gardein Mandarin Chicken (my favorite Vegan brand)
- 2 tablespoons of soy sauce
- 2 tablespoons of olive oil (or cooking oil of choice)
- 2 large carrots
- 1/2 of an onion
- 2 bell peppers
- 1 teaspoon of pepper flakes (optional)
Pour 1 cup of water in a small pot and let it come to a boil. Add rice, stir and cover. Turn down to simmer (15 min).
In the meantime preheat your oven to 425 degrees Fahrenheit (you may need to adjust temperature if you're high in altitude.
Take out the mandarin sauce that comes with the Gardein Chicken and pour it in a small pot. Set the temperature on low or warm.
Place the "chicken" onto a baking sheet and place it in the oven.
In the meantime, chop your onions, bell pepper, and carrots .
Once you are done chopping, take a clean pan and set to high heat. Add the oil.
Once the oil is starting to sizzle, add the soy sauce and it turn the heat slightly down.
Add onion, bell pepper, carrots, and pepper flakes.
In the meantime, check on the rice to make sure you didn't burn it lol. (It should be done in 15 minutes depending on your stove)
I like my veggies to have a crunch but if you like yours soft, cover it with a lid and turn down the heat to medium low for about 10 - 15 minutes.
The "chicken" may or may not be ready, so I usually tidy up the kitchen while I wait.
Take "chicken" out of the oven.
Add the "chicken" to the warm sauce and coat each chicken strip with sauce.
Give your veggies a quick stir and add some of the mandarin sauce to it. If you want more flavor add more soy sauce or seasoning of your choice.
Assemble your plate!
DON'T FORGET TO TURN OFF THE STOVE!
